If you've been to Bonefish, then you know all about Bang Bang Shrimp. This is an amazing copycat recipe.
I have made it with shrimp. but we prefer chicken. This is an absolutely impressive meal to put together for company. We serve it alongside rice, asian Cole slaw, and these potstickers.
Prepare the sauce first:
1/4 C. mayonnaise
2T. sweet Chili sauce
1 T. honey
2 tsp. frank's hot sauce
Add ingredients to a bowl, and whisk together. Set aside.
Heat 1 container of vegetable oil in a large skillet. over medium high heat.
Prepare the coating mix:
1 C. Buttermilk. (If you do not have buttermilk, add a teaspoon of vinegar to regular milk)
3/4 C. flour
1/2 C. cornstarch
1 egg
1 T. hot sauce
Mix together in a large bowl.
Place 1 large container of Panko Japanese style breadcrumbs into a shallow baking dish.
Cut 1 pound of chicken breasts into 1 inch pieces.
Dip into the coating mix.
Roll through the Panko. Coat well.
Fry about 8-10 pieces at a time for 2-3 minutes.
Remove from oil and place on a rack in oven to keep warm. Finish frying the remaining chicken.
Place fried chicken into a shallow bowl. Drizzle prepared chili sauce over. Stir to coat. Sprinkle with sliced green onions. (optional).
Serve immediately.
