This recipe came from an old high school cookbook. I thought I’d try it.
Wow! It’s a good one! Don’t let the simplicity of the picture fool you! These bars are big on taste!!
Pumpkin Bars
1 box yellow cake mix, Reserve one cup
3/4 C. Butter, melted + divided
1 can of pumpkin
1 1/2 tsp. Pumpkin pie spice
2 eggs
2/3 C. Evaporated milk
1/4 C. Sugar
1 tsp. Cinnamon
Whipped cream for garnish
remove one cup of cake mix from the package. Set aside. In a mixing bowl mix together the cake mix a half a cup of butter and one egg. Mix well with a fork and pour into the bottom of a 9 x 13 pan.
Filling:
In a mixing bowl, combine the pumpkin, egg, milk, and pumpkin pie spice. Mix well and pour over the crust layer.
Crumble topping:
Mix 1/4 C. Butter, melted, with reserved cake mix, sugar and cinnamon. Mix together with a fork. Mixture will be crumbly.
Add it to the top of the pumpkin.
Bake at 350° for 45 to 50 minutes. Remove and allow to cool. Serve with fresh whipped cream or ice cream.
